Steps
Step 1: Soak the sticky rice overnight in water.
Step 2: Prepare the filling by combining cooked pork belly, salted egg yolks, dried shrimp, mushrooms, and any other desired ingredients. Cut them into small pieces.
Step 3: Rinse bamboo leaves and soak them in hot water for about 30 minutes until they soften.
Step 4: Take two bamboo leaves and overlap them to form a cone shape. This will be the base of the dumpling.
Step 5: Add a layer of soaked sticky rice to the cone-shaped bamboo leaves, filling it about one-third full.
Step 6: Add a spoonful of the prepared filling on top of the rice.
Step 7: Add another layer of sticky rice on top of the filling, covering it completely.
Step 8: Fold the bamboo leaves over the rice, forming a pyramid shape. Secure the leaves tightly by tying them with kitchen twine.
Step 9: Repeat steps 4-8 with the remaining ingredients until all the dumplings are assembled.
Step 10: Place the dumplings in a large pot and fill it with enough water to cover them.
Step 11: Bring the water to a boil and then reduce the heat to low. Simmer the dumplings for about 3-4 hours, ensuring they are fully cooked.
Step 12: Remove the dumplings from the pot and allow them to cool slightly.
Step 13: Serve the sticky rice dumplings warm or at room temperature. You can enjoy them as is or with a dipping sauce of your choice.
Note: Remember to remove the kitchen twine and bamboo leaves before consuming the dumplings.

Diet Restrictions
- For individuals with gluten intolerance or celiac disease, use gluten-free sticky rice or substitute with other gluten-free grains such as quinoa or millet.
- To reduce sodium intake, use low-sodium soy sauce or tamari in the filling or as a dipping sauce. Alternatively, opt for reduced-sodium versions of other sauces used in the recipe.
- For those following a vegetarian or vegan diet, replace meat fillings with plant-based alternatives like marinated tofu, tempeh, or mushrooms.
- To lower the fat content, choose lean cuts of meat or trim off visible fat before cooking. Alternatively, use skinless poultry or fish as a filling option.
- Individuals with diabetes or those watching their blood sugar levels can use a smaller portion of sticky rice and increase the amount of vegetables or protein in the filling.
- For people with nut allergies, avoid adding nuts commonly used in traditional recipes, such as peanuts or chestnuts, and substitute with seeds or dried fruits if desired.
- Individuals with lactose intolerance can skip adding any dairy-based ingredients, such as butter or milk, to the recipe.
- To accommodate a low-carb diet, replace sticky rice with cauliflower rice or use a smaller portion of rice and increase the amount of protein and vegetables in the filling.
- For those following a low-FODMAP diet, avoid using garlic or onion in the filling and opt for garlic-infused oil or green parts of scallions as a flavor alternative.
- Individuals with high blood pressure can reduce the amount of salt used in the recipe or eliminate it altogether, relying on other herbs and spices for flavoring.
Healthy Choices
- Use brown or black rice instead of white sticky rice to increase fiber and nutrient content.
- Add a variety of vegetables like mushrooms, carrots, and peas for added vitamins and minerals.
- Incorporate lean protein options such as chicken, shrimp, or tofu to boost protein content.
- Reduce the amount of fatty pork belly or substitute with leaner cuts of meat.
- Limit the use of salt and soy sauce, and instead enhance flavor with herbs and spices like ginger, garlic, and green onions.
- Consider steaming or baking the dumplings instead of boiling in order to reduce added fats.
- Serve with a side of fresh salad or steamed vegetables to increase the overall nutritional value of the meal.
